When selecting "Use all monitors" in the RDP client, on Mac OS, the /multimon option is what is actually being invoked, which is NOT supported by Windows 7 Pro but IS SUPPORTED by Windows 7 Ultimate and Enterprise and all subsequent versions of Windows. The problems here are that Microsoft Remote Desktop for MacOS is missing the /span option functionality and Windows 7 Pro support as an RDP target was deliberately hobbled by Microsoft in a, some would say misguided, attempt to drive revenue for sales for its premium/enterprise versions of Windows 7.
It makes no difference what monitors you have on the remote system or what resolutions they are running. You have to have two displays, locally, that are running at the same resolution.
